Blueberry Yoghurt Cake 蓝莓优格蛋糕




I know that my family will like to eat the type of cake like <Blueberry Yoghurt Cake> so after seeing the original recipe being posted on Facebook by Wei Lee Hoh, I decided to make one myself.  Truely, both my hubby & son had helped me to finish the cake without me asking them.

感觉这个星期好像过得很快,又或者我变懒了,哈哈。 这是三个星期前做的蛋糕。当初在面子书看到时就知道家人会喜欢这类的蛋糕,加上现在可以买到便宜的蓝莓,所以就行动了。




Blueberry Yoghurt Cake
蓝莓优格蛋糕

Makes a 21cm x 10cm x 7cm Cake

Ingredients:
225g Cake Flour(Low Gluten Flour), sifted
2tsp Baking Powder, sifted
150g Unsalted Butter at room temperature, chopped
150g Caster Sugar (Sugar can be increased to 200g)
140g Vanilla Yoghurt
2 Eggs, lightly beaten
1tbsp Finely Grated Lemon Zest
2tsp Lemon Juice
2tbsp Fresh Milk
1tsp Vanilla Extract
Pinch of Salt
125g Fresh Blueberries + Some Extra Cake Flour

Method:
1. Preheat oven to 160C(fan-forced).
2. Beat butter & sugar until light & fluffy.  Add egg one at a time, mix well on each addition.
3. Add yoghurt, follow by lemon zest, lemon juice, milk & vanilla extract.  Mix well on each addition.
4. In a separate bowl, mix flour with baking powder & salt.
5. Add flour mixture into the cake mixture in 2-3 rounds.  Mix with a spatula.
6. Dust blueberries with some extra cake flour.  Place in a small fine strainer, shake to remove excess flour.
Fold blueberries into the cake batter until just incorporated.
7. Spoon the cake batter into a greased & floured loaf pan.  Smooth the top. Bake in the middle level for about 60 minutes or until a cake tester comes out clean.
8. Leave to cool in the loaf for 10 minutes, then remove & place on a wire rack to cool down completely.

Li Shuan@Helena’s Kitchen was in Sydney a few weeks ago so we arranged to meet up for lunch, followed by a tea time & window shopping. Li Shuan & I have both started our blogs in the same month 2 years ago. two completely strangers, two Malaysians who live in two different cities in Australia, 2 who loves to chat, 2 who seem to know each other well but never met before…… finally, finally……WE MET! 

I think we basically covered all kinds of topics in a short gathering, haha.  So nice to meet you on that day, Li Shuan! 

知道Li Shuan要来悉尼时我高兴得飞起,哈哈。虽然只是一个短暂的聚会,但是我们却谈了很多的话题。还有时间一起去gaigai。看来看去还是她拍的这张照片比较好看,所以就向她借了这唯一的照片放上来。

  4. 我也喜欢这个有蓝莓的蛋糕, 但是我的俩个女儿却不吃, 所以我家里很少出现这类的蛋糕了!
    只能来这里望梅止渴了, 哈哈

  21. Jessie, sorry 来得很晚。刚刚才得空坐下来看帖子,才看到我的照片在这里呵呵。。。! 前两个礼拜蓝莓明明很便宜,但是一想吃它就变回5。99 了。 这个蛋糕很幼滑,一定好吃! 又进新道具,看到最后一张照片的盒子很可爱
