上次和Li Shuan通电话,她说她会做<芒果班戟>,我说我也会来个encore,因为实在太喜欢那个皮了。因为是农厉新年的关系,这次多试了香兰口味的班戟,也把皮做得更小片,是希望包起来的时候把它当著是"元宝",这样顺理成章就给它们取名为<金玉满堂>咯!
The last time I spoke to Li Shuan@Helena's Kitchen, she told me that she was going to make some mango pancakes and I also said that I was going to make them again because I just simply love the pancakes(crepes) so much and they taste just as good as the ones that I had in HK before!
I made these pancakes 2 weeks ago & besides the original flavour, this time, I also made the pandan flavour and you know what, I love it! If you like pandan, I think you won't say no to this Pandan Mango Pancake. Yum!
扁塌塌的"元宝"相信只有在我家才找到,哈哈!
I named these pancakes as <金玉满堂> which means "A Hall Full of Gold and Jade"
这次偷懒,皮稍为做厚了点,好处是把它搬来搬去的时候不容易破,但要包的时候就出事咯,corner的地方都出现裂痕!还是皮薄包得好看,去Li Shuan的家一趟,看看她家的<芒果班戟>是包得多麽的完美!
I didn't have the same patience like the 1st time of making, I used more pancake batter for a smaller fryingpan & the the pancakes were slightly thicker than my 1st attempt. They were easier to move around without breaking into pieces but the bad thing is when I fold them into a parcel, the corners cracked a bit. Didn't look nice but didn't affect the taste of it.
如果你喜欢吃班戟,一定要试这香兰口味的,因为真的很好吃,hor hor jiak,manyak sedap,yummylicious咯!
Like I said before, I really like this <Pandan Mango Pancakes>. In the future, I'll surely make the same flavour again!

香兰芒果班戟
Mango Pandan Pancake
Serves 5-6
Ingredients:
(A) Original Flavour:
1/2 Egg
40g Cake Flour@Low Gluten Flour, sifted
120ml Fresh Milk
8g Unsalted Butter, melted
10g Icing Sugar
1-2 Drops Yellow Food Colouring
(B) Pandan Flavour:
1/2 Egg
40g Cake Flour@Low Gluten Flour, sifted
20ml Pandan Extract
100ml Fresh Milk
8g Unsalted Butter, melted
10g Icing Sugar
1-2 Drops Green Food Colouring
(C) Fillings
2 Mangoes, cut in cubes
200ml Whipping Cream
30g Icing Sugar

2. 我沒用過,但老公說這些比煤氣cooktop來得貴,因為電費很貴嘛。
3. 他沒聽過,Smeg牌子也有大小不同的尺寸。
4. 我舊家用的是Westinghouse煤氣烤爐,比現在的電爐還要大。現在這個是56L的。兩著相差不大,用來烤蛋糕和麵包的溫度都蠻相同的。
