农厉新年前夕,家婆慷慨地给了我花胶,青边鲍鱼和北海道带子,哇,全部都是我不会花钱买的珍贵食材,所以在年初二那天就煮了这些菜来慰劳家人。
Just few days before the Chinese New Year, my mother-in-law had generously given me some fish maw, top grade of the frozen abalone(the "green rim" abalone) and Hokkaido scallops, so on the 2nd day of CNY, I had used them to cook some nice dishes. To be honest, these are some of the expensive food that I won't use my own money to buy(it is something which I can live without, haha) so thanks to her, we had the chance to enjoy the dishes!

北海道带子不但大大粒的肉又厚。在澳洲如果要吃北海道进口的带子,去亚洲人开的海鲜档便可以找到。
These Hokkaido scallops are huge. In Australia, you can find them in most of the Asian seafood stalls, selling in boxes, imported directly from Hokkaido, Japan.
家婆先把花胶出了水洗乾净後才给我的,省了我很多功夫。要用时,只要把它解冻就可以了。只要这麽一片的花胶就足够可以煮出鲜甜的药材汤。花胶的肉是不是重量十足呢?按这里可以找到另一道用花胶熬的汤,ie,<木瓜香梨花胶汤>

我先用青边鲍,花胶,猪肉,鸡肉和一些药材来熬汤,再用青边鲍来和带子跟其他的蔬菜来杂炒。
I first used the abalone to boil soup with fish maw, pork, chicken and some chinese herbs, then I sliced the abalone and put them with the stirfry.

鲍鱼带子杂炒
Abalone Scallop & Vegetable Stir Fry
(Recipe Source: Jessie-CookingMoments)
Ingredients:
1 Large Abalone, cooked and sliced
5 Hokkaido Scallops, rinsed
1 Large Carrot, sliced
1 Large Carrot, sliced
150g Broccoli
150g Cauliflower
65g Corn Kernels
8g Ear Clouds (Black Fungus), soaked & trimmed
1 Medium Brown Onions, roughly chopped
2 Cloves Garlic, finely chopped
1tbsp Oil
Seasonings:
1tbsp Oyster Sauce
1-1.5tsp tsp Light Soy Sauce
1/2tsp Brown Sugar
1/2tsp Brown Sugar
1/2tsp Sesame Oil
2tsp - 1tbsp Mirin or Any Cooking Wine
2 Drops Dark Soy Sauce
2 Drops Dark Soy Sauce
Method:
1. Heat up oil in a wok over medium high heat. Cook garlic until fragrant. Add onion, carrot, cloud ears and cauliflower and cook(and simmer) for 1-2 minutes. Add some water if necessary(I added the abalone soup).
2. Add broccoli and seasonings. Stir and simmer for a minute.
3. Add scallops and abalone. With high heat, stir until the scallops are cooked. Serves immediately.

The soup and stir fry vege must have been very tasty with such high grade ingredients. Wah, your hubby's birthday makan very syok lah! I see got roast pork, some more got sausages and beer. The chocolate birthday cake is yummy too!
ReplyDeletePhong Hong, that was the typical German/Austrian food. The reason I chose that restaurant is becoz I know that the guys would love the European beer whereas the ladies would be happily settled with some champagne!

ReplyDeleteMin, I used a flower-shaped cutter bought from Daiso. Actually 1 set comes in 2 different flower-shaped cutters, the other one is sakura shaped which isn't as pretty as this shape!

DeleteJessie, I put on some weight after having so many goodies. How about you? :DD Is that a roasted pork leg in one of the pictures? I also had one during CNY in a German restaurant. Quite a big spread with sausages and ham.
ReplyDeleteAnn, I think I've put on some weights too. By the way, I'm going to start a 3 weeks of dessert-free diet starting from tomorrow & will also cut down my meat & rice intake daily. I told William earlier that in the future, I'll cook vegetarian food on certain days instead of meat, meat, meat only! That's right, it was the roasted pork knuckle in the middle of the platter. It tasted better than the pork belly which was over-seasoned with salt. The pork knuckle was good! That wasn't really for 2 people, I think it needs 3-4 people to finish everything on the plate!
